Today’s recipe for Chinese Cooking 101 Basics is Chicken Drumsticks Chinese Style. We use maltose in our recipe. It’s a common ingredient in China for Chinese cooking. In North America, maltose is not used as much. I used to see jars of maltose in Asian supermarkets but never used it before. Once I started using maltose, it’s become my secret ingredient for a lot of Chinese recipes.
Maltose gives the chicken drumsticks a nice golden color with a nice shine. As well as giving them a slight sweet flavor. Maltose is used in many Chinese recipes. I have used maltose in Chinese Roast Chicken, Chinese Roast Duck, Chinese Cha Siu BBQ Pork and Chinese BBQ Spareribs. It’s a simple ingredient to add to your recipes to make your foods more delicious.

CHINESE CHICKEN DRUMSTICKS WITH MALTOSE
12 to 16 chicken drumsticks
2 to 3 tablespoons maltose sugar
2 tablespoons honey
1/4 to 1/3 cup wat
5 spice powder to taste (optional)
salt to taste (optional)
COOKING PROCEDURE
In a bowl put in the maltose sugar. Add honey and then add the boil water. Mix until dissolved. If you don’t have maltose, you can use just honey. I like to mix maltose and honey for this recipe.
Arrange drumsticks in a tray. If you like, you can sprinkle 5 spice powder or salt over the drumsticks. Preheat the oven to 375 degrees F (191 degrees C) Cooking time for the drumsticks is 35 to 45 minutes, depending on the size of the drumsticks. You can cook at a higher temperature for a more crispy skin but you have to watch your time so the chicken doesn’t overcook or get too dry.
At the halfway mark, pull the tray of drumsticks out. Baste the chicken drumsticks with a spoon or a brush. Put the tray of drumsticks and finish cooking for the last half. Enjoy!
