This is my first air fried recipe with chicken wings. I often think frying food at home is not so practical since a lot of oil is needed. Air frying is a great alternative to fry at home and still make the wings so crispy and tender inside. If you don’t have Sichuan pepper powder, please go ahead use ground black pepper only. Enjoy!

If you want to make the mix from scratch, check out my Salt and Pepper Shrimp recipe:

Written recipe for Salt and Pepper Chicken Wings:

Ingredients:
1 1/2 lb chicken wings
salt
ground black pepper
Sichuan pepper powder
chili powder
sugar (optional)
Shaoxing cooking wine (optional)
light soy sauce
ginger slices
green onion white parts
all-purpose flour

Preparation:
1. After rinsing the wings, soak in salted water about 10 to 15 minutes.
2. Take the wings out of the water and pad dry with paper towels.
3. In a bowl, season the wings with salt, light soy sauce, ground black pepper, Sichuan pepper powder, ginger slices, white parts of green onions, and cooking wine. Mix well. Marinate about 10 to 15 minutes or a few hours if time allows.
4. Take the wings out onto paper towels to dry. Add 2 tablespoon flour to coat.
5. To make the mix, mix 1/2 tablespoon salt, 1 tablespoon Sichuan pepper powder, 1 tablespoon ground black pepper, 1/2 tablespoon chili powder, and 1 teaspoon sugar (the leftover mix can be saved).

Air fry;
1. Brush or spray the basket with a bit oil, place wings in it.
2. Turn the temperature to 375°, and set the time to 15 to 20 minutes (even better frying them in two batches).
3. In the middle of frying, move the wings around to fry evenly.
4. After about 20 minutes, the wings are ready. Sprinkle the mix to the wings and toss. Serve!
