Today we have a recipe for Chicken Chow Mein Old Style 老式鸡肉炒面 The noodles were deep fried aand mixedin with stir fried vegetables. My grandfather’s restaurant, the New Look Cafe, served their chow mein this way. In this video, we use the cooked Walmart roast chicken, but you can use other kind of chicken. You can also use other toppings, such as beef, pork, shrimp, prawns and other toppings. Recipe is below:

CHICKEN CHOW MEIN OLD STYLE 老式鸡肉炒面
1 package Cantonese deepm fried noodles (1 lb. or 454 grams)
1/3 cup slivered Walmart roast chicken (or 3 to 4 cooked or raw chicken sliced)
1 to 2 tablespoons ginger sliced
1 small onion sliced
1 celery stalk sliced
2 cups bean sprouts
2 to 3 cups nappa cabbage (also known as siu choy)
3 tablespoons cooking oil
2 to 3 tablespoons light soy sauce
1 to 2 tablespoons Chinese oyster sauce (or hoisin sauce)
1/2 teaspoon salt (optional)
1 cups water (or chicken broth)
1 tablespoon cornstarch in 1/3 cup water
Cooking Instructions:
Preheat a wok or frying pan. Add cooking oil. When oil is starting to smoke, add ginger. Stir fry briefly. Add onions and celery. Continue to stir fry briefly. Add bean sprouts and nappa cabbage. Stir fry to desired tenderness.
Add water or chicken for the sauce. Add soy sauce and Chinese oyster sauce. Bring the sauce to a boil. Add slurry of cornstarch in water to thicken the sauce. Depending on the thickness of the sauce you desire, add more or less of the slurry.
Add 2 to 3 cups of the noodles to mix in with the other ingredients. Serve the chicken chow mein on a nice plate. Enjoy!
