Recipe is below:
SCRAMBLED EGGS WITH PRWNS AND CHIVES 虾仁韭菜炒鸡蛋食谱
8 eggs ( 2 or 3 eggs per person for main servings)
2 cups green chives chopped
1/2 to 1 lb. tiger prawns (272 to 454 gms. tiger prawns)
5 to 6 tables[poons penut oil (or other cooking oil)
2 to 3 tablespoons or more light soy sauce
1 to 2 tablespoon sesame oil
Cooking Procedures:
Preheat a pan or wok at medium to medium high heat. Add cooking oil. Sear prawns for 60 tp 90 seconds. Tak off prwns onto a plate or bowl. Beat eggs with a pair of chopsticks or a fork. Add eggs into the fry pan. Let eggs set for about 20 to 30 seconds to increase fluffiness of the eggs The edges around the egg will crisp up. Push the egg towards the centre. The eggs will still be runny when you add the chives. Stir the eggs and chives to mix toger. Add prwns back and do final stir fry. Remove the mixture onto a nice serving plate. Add afew dashes of light soy sauce and sesame over the mixture. Serve as a main dish or as a side dish with hot stemed rice if you like. Enjoy!
Note: For gas stoves, I like to use a carbon steel wok. For electric stoves, Im prefer using a carbon steel fry pan because it has more surface contact on the stove heating coils. Eith way, using a carbon steel pan or wok will bring some nice carbon sear to give some nice “wok hei” to your dish.
