INGREDIENTS
1.5 to 2 lbs (700 to 900 g) pork belly, cut into 1” (2.5 cm) cubes
Blanching Liquid
2 green onions, cut into 2” (5 cm) pieces
1/2” (1 cm) ginger, sliced
Braising Liquid
2 tablespoons peanut oil (or vegetable oil)
3 tablespoons sugar
1/3 cup Shaoxing wine (or dry sherry)
2 cups reserved blanching liquid
3 tablespoons light soy sauce (or soy sauce)
1 1/2 tablespoons dark soy sauce
1” (2 cm) ginger, sliced
3 green onions, cut into 2” (5 cm) pieces
2 whole star anise pods
