I’m going to make a very popular Thai dish, ผัดเส้นเล็ก (Phat sen lek), which is stir-fried rice noodles.
In this dish, the noodles are very tender and the Thai flavors are balanced: salty, sweet, sour, and spicy.
👩🍳 Ingredients for 4 people:
10 oz dehydrated rice noodles (or 1 lb fresh rice noodles)
4 eggs
3 oz shallots
½ lb bean sprouts
3 oz green onions
1 tsp chili flakes
4 tbsp vegetable oil
1 cup water
Seasoning sauce:
4 tbsp tamarind concentrate
1.7 oz palm sugar
1 tbsp dark soy sauce
3 tbsp fish sauce
¼ tsp salt
