CHINESE CHICKEN NOODLE RECIPE

Chicken bones from free range chicken or other kinds of chicken
4 to 8 oz. free range chicken pieces (or other kinds of choicken)
3 cloves garlic chopped
2 pieces ginger (thumb size)
16 to 20 cups water
Chinese red dates
goji berries
1/2 to 1 cup cilantro
1 tablespoon or more sesame oil per individual serving

COOKING INSTRUCTIONS

In a large pot, add water and bring to a boil. Add chopped garlic and gonger. Add chicken bones and chicken parts. Bring down heat to low to medium low. Simmer chicken broth 1 to 2 hours. Skim broth along the edges several times during simmering of the broth. This gets rid of the impurities and scum. In the last half hour, add chicken pieces, Chinese red dates and goji berries. Add cilantro into the pot just before serving.
While chicken broth is simmering, boil the noodles according to instructions. For individual servings, put noodles into a soup bowl. Ladle chicken and broth over the noodles. Add a dash of sesame oil over the broth. Enjoy!
