Aromatic Scallion Oil Chicken Recipe
In this video, I’ll show you how to make aromatic and versatile scallion oil (green onion oil). The ingredients are so simple. Adding some onion slices enhances the flavor. You may use to dress chicken, noodles or salad. Enjoy!

Written recipe for Scallion Oil (Green Onion Oil) Chicken:
Ingredients:
1 chicken breast
6 stalks green onions, thinly sliced + finely chopped
4 ginger slices
1/3 tsp Szechuan peppercorns (or black peppercorns)
4 cups water
salt
avocado or vegetable oil
2 tablespoons light soy sauce
cherry tomatoes for garnish (optional)
1. Add 2 white part of green onions, ginger slices, Szechuan peppercorns and chicken breast in a pot of water. Bring it to boil.
2. When it boils, flip the chicken breast, and add 1/3 tsp salt.
3. Turn the heat to medium, poach about 15 to 20 minutes.
4. Take out the chicken breast and set aside.
5. Heat up 2 tablespoons oil, fry sliced white part of green onions and onion slices for about 30 seconds.
6. Add sliced green part of green onions, and fry together till golden brown.
7. Add a pinch of salt and 2 tablespoons light soy sauce to the chopped green part in a bowl. Pour the oil over it, and mix.
8. Hand tear or cut the chicken breast into bite size, and place on a plate. Pour the sauce over the chicken. (optional, garnish with cutup cherry tomatoes). Serve!
