Today’s recipe is Steak And Pepper Stir Fry With “Wok Hei”. Wok hei is the carbon sear flavour produced by cooking in a carbon steel pan or a carbon steel wok. You can use any cut of beef for this recipe, such as flank steak, chuck steak or blade steak. Inthis recipe we’re using ribe eye steak. Usually rib eye steak is tender but not this time. So I marinaded the rib eye steak to make it more tender. Marinading beef, pork, chicken or other meats, is called “velvetting” in Chinese cooking.

Recipe is below:
TO MARINADE THE BEEF
2 to 3 tablespoons corn starch
1/2 teaspoon dark soy sauce
2 to 3 tablespoons light soy sauce
1 teaspoon sesame oil
1/2 teaspoon Himalayan sea salt or other salt
6 to 8 tablespoons cooking oil
1/4 teaspoon baking soda (optional)
In a bowl, put all the ingredients and mix well. Put the marinade in the fridge for at
least 1 hour or more. Preferably in the fridge overnight for the most tenderness.
INGREDIENTS FOR STIR FRY
1 teaspoon chopped ginger
1 teaspoon chopped garlic
3 + 3 tablespoons cooking oil
1 onion chopped
1 large red bell pepper
1 cup green pepper
2 to 3 tablespoons light soy sauce
2 to 3 tablespoons Chinese oyster sauce
1 tablespoon sesame oil
COOKING InSTRUCTIONS
Preheart a wok or pan at medium to medium high heat. Add 3 tablespoons of peanut oil or other cooking oil Add ginger and garlicand stir fry briefly. Turn heat to high. Add beef steak and sear for 1 minute before turnoiong beef. Add onion and continue to stir fry until beef is cooked half way or more. Remove beef and onions into a bowl or plate.
Add green pepper and red bell peppers and stir fry briefly. Add more cooking oil if needed. Continue to stir fry until vegertables are about 3/4 cooked. Return beef and onions. Add light soy sauce and Chinese oyster sauce and stir fry briefly to mix all the ingredients. Just before serving, add a dash of sesame to add a little nutty flavour and aroma to your stir fry. Serve on a nice large plate. Enjoy!
